Calibrating a gas oven? My sister won't fix her oven so I have to cook funeral foood at niece's???

I think you are making a lot of work to make sandwiches.Your

casserole is adequate. You could buy a deli salad like the 7 layer salad. Get some cut up fruit?
Rolls and sliced ham.
How many dishes do you want to serve? It's lunch. The enchiladas are "rich"/filling.

 
Of course you are both right, but food/cooking/feeding help me get through these things.

It makes it more personal and that has meaning for me. Doing that, for me, honors mom and helps me.

I did the same thing when my husband died, I served all his favorite foods...it comforted me, but then again, I had my own kitchen at hand. So, I may need to sway in the wind on this, but since so many are vegetarians I have to plan a bit because I don't have go to recipes for that.

 
these sound perfect and do-ahead and some veggie and some w/meat. perfect.

I was going to suggest tortilla wraps, but you would have to check for lard in the ingredients for the vegetarians.

Yes, and we drive ourselves crazy! I get so stressed out in the planning stages

and just when I think I have found the perfect menu...I start all over again in a couple of days, thinking it is simply not good enough. Grrrrr!
