Can the 7 min icing live at rm temp overnight/travel?
I haven't made 7 min icing since I was a kid, but thinking this might be festive and per Richard's suggestion make for a nice centerpiece cake. If not, I may just do a buttercream icing...I'm still not sure what I'm making. It might end up being these cupcakes (see link). Problem is I'm just not feeling it this year and haven't gotten in the groove. Also, it's hard when you are making something you can't eat knowing there isn't anything else they are serving that you can/want to eat.
Well after all that I ended up with cupcakes -- Pepperment Twist ones
It was the kid factor -- we had several kids coming so I ended up with cupcakes.
These are quite good. The batter is moist. The ganache made approx 2x the amount needed. And don't go near the icing - I tossed it out. Don't know what I was thinking (ok, I was on the phone and wasn't thinking) with 3 sticks of butter, 1/2c sugar and gak...pudding. Giant yellow yucky tasting blob is was it was. Made my own white version with peppermint extract. Did the candy cane swirls, very pretty. The whole thing tasted wonderful, yes you heard me right I ate one -- and it didn't bother me. I wonder why cocoa powder doesn't slam me with caffeine like other chocolate?
Don't know but it's good news!
Tried the baking cups instead of cupcake wrappers for the 1st time. Interesting. Overflowed a bit and a tad difficult to remove, but I liked the way they looked so much better.
