Came across this recipe for Waterzooi...

It's hard to find bones in regular stores

I buy whole chickens and debone them myself but when I need bones and don't have any, I go to ethnic grocery stores. They almost always have cheap chicken parts like necks, feet and such that make WONDERFUL rich stocks, especially the feet which make a very gelatinous rich stock. And by getting necks, it has some meat on it. I also use wing tips.

 
HELP!!! Further clarification on dad's food list.

Ok, so here's what he can't eat:

No meat except for chicken (but no chicken broth) and some varieties of fish
No shellfish, salmon, trout, haddock, herring
No alcohol
No asparagus, cabbage
No white flour bakery products
No dairy products

His friend does not eat pork (she's Jewish).

He can eat greens, fruit, nuts, whole wheat products, and legumes, and jokingly suggests that I serve oatmeal for dinner.

I might have to; I've never had to cook a meal with so many restrictions. At this point, I'm thinking a Greek salad might be our only option.

Any further thoughts, guys? I feel bad that I already asked for help this week, but I'm totally flummoxed by this.

 
I wonder if the "no chicken broth" means the canned stuff? Do you know why broth is excluded and

chicken isn't? Inquiring minds...

 
I love this broccoli recipe, no dairy and you could skip the red pepper flakes if need be.

My Favorite Broccoli

Amount Measure Ingredient -- Preparation Method

1 lb broccoli
2 Tbs olive oil
1/2 tsp salt
1/8 tsp crushed red pepper flakes
2 tsp water
1 medium clove garlic, minced

1. Trim broccoli and cut into florets. Put in a colander and rinse well. (Do
not pat dry.)

2. Put olive oil, salt and crushed pepper flakes into a heavy skillet and
place over medium heat. When hot, add broccoli, cover and cook 2 minutes.
(Turn heat to medium-low if necessary to keep broccoli from browning.) Stir
in water and garlic. Cover and cook an additional 3 to 4 minutes, or until
just tender. Serve the broccoli hot or cold.

YIkes! Maybe your original idea of roast chicken and roast vegetables was right all along

His no-dairy and no-shellfish restrictions automatically take care of a couple other kosher rules. His friend may not be that strict but you never know. I'm just wondering what you can do for gravy. No wine, broth or cream--not many options. Maybe a tomato-based sauce would work.

It sounds like he has a sense of humor about it so you can probably serve the rest of the group a few things that he can't have, as long as he has a large enough selection.

 
What about Rec: Honey Glazed Lemon Chicken

I made this a few years ago. Very good; pretty presentation, w/ the crackled skin. Very easy. I served them with green beans, but a salad could do; if beans are a restriction.

Honey Glazed Lemon Chicken

2 6 1/2- to 7-pound roasting chickens, rinsed, patted dry
2 1/2 cups fresh lemon juice (from about 12 large lemons)

Coarse kosher salt
Freshly ground black pepper

1/2 cup honey, heated until pourable

Place each chicken in heavy-duty resealable plastic bag. Add 1 1/4 cups lemon juice to each. Seal bags; turn chickens to coat. Refrigerate at least 6 hours and up to 1 day, turning bags occasionally.

Preheat oven to 450°F. Drain chickens; pat dry. Sprinkle each with salt and pepper. Place chickens side by side, breast side down, on racks in large roasting pan. Roast 15 minutes. Reduce oven temperature to 375°F. Roast 45 minutes.

Turn chickens breast side up. Brush all over with honey. Continue to roast until cooked through and deep brown, basting with any juices in pan and brushing with honey occasionally, about 55 minutes longer.

Transfer chickens to platter. Tent loosely with foil to keep warm and let stand 15 minutes.

Meanwhile, pour pan juices into small saucepan. Spoon off fat. Rewarm pan juices. Season with salt and pepper. Serve chickens with pan juices.
