Just FYI; if she is Kosher; you may consider purchasing Empire Chicken. My close friend keeps Kosher

when ever we entertain here, we go through the menu re: meat / dairy.

BUT, if we are planning chicken, I always get empire and make it in the foil pans. Also, she may be able to have veggie broth in place of chicken broth.... Just things to consider / ponder.

 
I know--funny how often your first instinct is the right one.

I found a lovely recipe for roasted rosemary chicken and vegetables on Epicurious but I didn't print it out and now I can't find it. I think if I do another search, it will pop up. I think I will probably go that route.

I don't think his friend is very observant; he didn't say anything to me about kosher foods and I know they eat out a lot.

He does have a sense of humor, so I think I will just try to have a wide selection of things. I think some stuffed mushrooms for appetizers might be good.

 
I love Greek potatoes! I use Evelyn's recipe here and always wonder why I don't make them more often

 
If you don't find it, here is one that is SOOO good and easy. Jacques Pepin's mustard crust chicken

It's become the go-to chicken recipe around here. I sometimes use chopped fresh rosemary in place of the dried herbs.

There is a little wine in it but I'm sure it cooks out, and it is wonderful with roasted potatoes and pan juices.

I may have started something with my kosher suggestions but I was just trying to cover every eventuality. You want her to feel comfortable. I have Jewish friends who are not religious but who don't eat pork or shellfish simply out of habit.
