Congrats! I was just reading through them & I can't believe you haven't told me about the bacon jam

I just ordered a jar. You know I have to have that to try. I am dying for it now.

they make that. With your recent foray into bacon mania, I bet you'll have some good ideas... (She said, hopefully!)

 
That is exactly what I had in mind & I haven't even tasted it yet

but I've already been trying to figure it out in my head. To get the good bacon flavor you have to get some carmelization on it. Then my mind starts thinking maybe some sort of confit process???? I'll work on it once I get it because my mind is already going crazy thinking about the possibilities for using it.....
crostini with shaved tenderloin topped with it and maybe a piece of blue cheese
crostini with it and blue cheese or brie
OH the possibilities but I can't afford to play with it much at $13 a jar....

 
My guess is...

It's like tomato jam, with onions and bacon....reduced to a pulpy goodness. You've already had good success on infusing a variety of things with good bacon flavor, I can see this is just the next step in your progression.

One day I went to Skillet for breakfast and I asked for a sample. The girl forgot to heat it up but I didn't care, I was happy to just lay my hands on some. Cold, it did have some little globules of fat (from the bacon grease?).

 
I think I might go ahead & start playing this recipe....

who knows, if I don't hit on their recipe, I might invent something different and equally wonderful. I just had an idea - what about a tomato and bacon jam? I mean there is nothing more perfect together than bacon and tomato. I have this whole next week off - watch out - here I come!!!
