Can we start a thread on crepes? Savor, sweet, your favorite. TIA!

It does. So I checked my old recipe card and that's what it says. I know I used to buy 2 of the

big bags of coarse spinach (we didn't have baby spinach in the olden days) and chop it really finely. I'd guess they would total 1 pound together though. I've also used boxes of frozen and I'd guess about 1.5 pounds of frozen. This is a large quantity and it doesn't indicate the # of crepes.

I've made it several times and within the last 5 years. I can't understand why the 2 pound issue didn't stand out.

It was a pleaser though. It got me a good reputation with men and women at the office when I'd take it in for late night worknights.

 
Thanks for your feedback Marg. I just thought offhand that 2 lbs. of fresh spinach was an

enormous amount.

The next time I make crepes, it will be your recipe. It looks delicious!
