$$$ Challenge! I have told Bub that due to our decrease in household income,

Pasta --make a large batch of marinara, freeze in portion sizes --add

cannelli beans (pasta fagoli); peas (pasta piselli); lentils (pasta lendichi); boiled potato (pasta patana) to any pre-cooked short macaroni.

Quick, easy, cheap, and full of protein.

 
Great idea- and here is a good T&T Rec for you

The thing about Frittatas is that you can put almost anything in them. Use leftovers if you have them- meats, veggies, whatever. The results are one of a kind and delicious!

FRITTATA (serves 2)

3 cups cooked spaghetti (about 1/2 lb uncooked)
3 eggs, slightly beaten
2 T milk
1 small chopped onion
1/3 cup parmesan cheese
1 tsp pepper
1/2 tsp salt
1 T oregano
dash cayenne pepper or chili powder
2 tsp butter
1 C picante sauce, warmed

Mix all together except for butter. Melt butter to very hot in 10” skillet. Add mix, spreading evenly to form tight cake. Turn down heat to medium-low, and heat until bottom is brown (about 10 minutes).
Divide in two. Turn each half with a spatula and brown the other side. Serve with picante sauce.

 
How about stuffed peppers? Inexpensive and delicious. Here is a REC

Bruna was my ex-husband's Mother- a great cook. I always make her recipe when I make stuffed peppers.


STUFFED PEPPERS BRUNA (serves 3-4)

3 large green peppers
boiling salt water
1 lb ground beef
3 T minced onion
1/2 cup quick-cooking rice (or regular rice half-cooked)
1/2 tsp salt
1 tsp each basil, oregano, thyme
2 cups tomato sauce, either canned or homemade
1/2 cup hot water
1/2 cup dry white wine
1 cup shredded cheddar cheese
Split peppers lengthwise and plunge into boiling water. Turn off heat and let stand 5 minutes. Drain and arrange in casserole dish.
Mix beef, onion, rice salt, herbs and 1 cup tomato sauce. Fill peppers.
Combine remaining cup tomato sauce with water and wine. Pour over peppers.
Cover and bake at 350° for 40 minutes. Uncover, sprinkle with cheese, and bake 20 minutes more.

 
REC Meat and Potato Pie- T&T in this house for sure

This is delicious and will stretch those food bucks:


MEAT AND POTATO PIE (serves 6)
1 -1/2 lb hamburger or ground turkey
1/3 cup medium salsa
1 egg
1/3 cup dried bread crumbs
1 chopped onion,
1 tsp oregano
1 tsp basil
1 tsp thyme
1 tsp pepper
1 tsp salt
Mix all this together and pat into pie tin to make a “crust.” Bake at 350° for 15 minutes. Drain or pat off fat with a paper towel.
Mix together the following ingredients and Mound this mixture in the “crust”.:
Mashed potatoes for 6
2 T butter
1 tsp celery seed
salt and pepper to taste
1 tsp of any of the herbs used above
2 T sour cream if desired
1/2 cup sliced mushrooms
Layer these on top and bake another 15-20 minutes: fresh tomato slices, onion slices, cheddar, jack, or American cheese slices, parmesan cheese

 
So funny, I just got done putting together stuffed peppers a couple

of hours ago. One of our favorite things in life.
