I have never made home made sofrito or recaito; which I can only imagine is WONDERFUL, I just buy it in the store. It is is in a glass jar in the ethnic aisle OR many places have plastic containers in the frozen section.
For the avocado oil, (This does not seem puerto rican to me...Although I am by no means an expert). I would imagine that adding cut up avocados to the recipe and plain olive oil would give you a nice alternative.
