The sauce was the best part. She made the sauce from scratch using canned peppers and I believe she blended in some Hatch chiles. It was real nice because it wasn't overwhelming chipotle but balanced with a little bit of kick to it and not sweet but maybe just a hint of sweetness.oh, I LOVE those. Our local mexican restaurant staff person looked at me like I was loco when I asked if they had them...perhaps on el menú secreto?
Is that red enchilada sauce? Or chili Colorado? Or just red chili sauce?
