I believe she used this recipe:

oh, I LOVE those. Our local mexican restaurant staff person looked at me like I was loco when I asked if they had them...perhaps on el menú secreto?

Is that red enchilada sauce? Or chili Colorado? Or just red chili sauce?

The sauce was the best part. She made the sauce from scratch using canned peppers and I believe she blended in some Hatch chiles. It was real nice because it wasn't overwhelming chipotle but balanced with a little bit of kick to it and not sweet but maybe just a hint of sweetness.
