Chocolate Orange Muffins

This is my latest twist on NLB's pineapple cream muffin recipe.

1 3/4 c flour
1/4 cup cocoa (not hot chocolate powder)
2 tsp baking powder
½ tsp baking soda
3 ½ oz package instant chocolate pudding
2/3 cup brown sugar
3/4 cup chocolate chips
1 egg, beaten
1 c sour cream (I’ve used yoghurt as well)
I cup marmalade (I use my homemade one, full of candied peel)
½ cup oil

Pre-heat oven to 425 degrees F. Spray muffin cups with non-stick cooking spray.

In a large bowl, sift together the flour, baking powder, baking soda, and pudding mix, then stir in the brown sugar and chocolate chips.
In a separate bowl, combine the egg and sour cream. Fold in the Marmalade and oil. Add the egg-marmalade mixture to the flour mixture, stirring until moistened. Batter will be thick.

I also added a splob of homemade vanilla paste, but I think next time I might add a teaspoon of orange extract instead.

Bake for 18 minutes. Makes 18 muffins.

They are so good. Luckily DD and her husband live with us and like muffins, or I would eat them all. Should go and fill up on carrots while the muffins are sitting there cooling.

Oh I love chocolate and orange, these are going on the after dieting list!
 
I allow myself to cheat a bit on weekends, that way I feel less deprived.
I cheated today because it was my birthday, but I didn’t plan well and last minute decided today I can have sugar. Since I didn’t decide that till 5pm, I went to the closest bakery online maps directed me to. Their “daily cake” of unknown flavor, a 6” cake mind you, was $90! Given I was 98% sure it would not be as good as one I made, skipped it to get a tiny cupcake size cheesecake from the good grocery store. It wasn’t worth it, but I only paid $3.99.

Happy belated birthday! I hope you enjoyed the cheesecake. I also seldom buy cakes because they are usually not as good as I or DD can make, so I splash out on croissants. I do not plan to diet while I am NYC for a few days, their bakeries are great. I do not plan to weigh myself for a couple of weeks either. :)

Yeah, it wasn’t worth the sugar.
 
Have you noticed the “small” layered cakes that USED to be 6” diameter…are NOW 4” diameter. I noticed this at Whole Foods, Publix, and Ingles.

And price is still higher!
