I loved how easy they were (no mixer) and how yummy. I simply used semi sweet and dark chocolate chips and didn't chop any of it (I can be soooooooo lazy).
Chocolate Peanut Butter Blondies
• 2 cups firmly packed brown sugar
• 1 cup unsalted butter, melted and cooled
• ½ cup creamy peanut butter, melted
• 1 tsp. baking powder
• ½ tsp. kosher salt
• 2 large eggs, room temp
• 2 tsp. vanilla extract
• 2 ½ cups flour
• 1 cup dark chocolate chips (63%)
• ½ cups lightly chopped bittersweet chocolate (70%)
1. Preheat oven to 350F. Line a 13” x 9” baking pan with parchment paper, letting excess extend over sides of pan.
2. In a large bowl, whisk together brown sugar, melted butter and peanut butter, baking powder and salt until combined. Add eggs, one at a time, whisking well after each addition. Whisk in vanilla. Stir in flour and chocolate chips until just combined. Spread batter into prepared pan Sprinkle with ¼ cup copped chocolate
3. Bake for 25 to 30 min.. Sprinkle with remaining ¼ cup chocolate and bake 2 min. more. Let cool completely in pan on wire rack. Sprinkle with sea salt if desired.
