Christmas cookie tray part 2, the Christmas Day edition with cheesecake

You can kind of read how the disco dust read in real life by the glitter look on the bell. Christmas Day dinner I added cookies to the eggnog cheesecake tray because after Christmas Eve, and sending everyone home with some, I still had en left to dress this platter with 2 large canisters still at home. Plus, more dough in the fridge. I almost feel like I could take on a Pittsburgh wedding at this point, lol.

This recipe, not even in a water bath, has never cracked on me.

For whipped topping I use :

*. 1 tsp unflavored gelatine
  • 4 tsp cold water
  • 1 cup 40% or heavy cream
  • 1/3 cup powdered sugar
  • 1/2 teaspoon vanilla
  • 1/2 teaspoon nutmeg
plus I stabilize it
    • Combine gelatine and cold water in small saucepan. Let stand until thick. Place over low heat, stirring constantly until gelatine dissolves. Remove from heat and cool slightly.
    • Whip cream, sugar, nutmeg and vanilla until soft peaks form. While beating, very gradually add gelatine. Whip at high speed until cream is stiff.
    • Yield: 2 cups
