Cinnamon Cappuccino Brownie Bites - frosting T&T (quick w/cheat)

This frosting is extremely good. A perfect amount of cinnamon, cream cheese and sweetness.

I cheated. I didn't make the from-scratch brownie - I used a brownie chub that I got on sale and with a coupon. I opened the triple chunk brownie batter from top to bottom, flattened it out a bit, sprinkled it with 1 tsp of instant espresso powder, then used my 1 1/2" scoop to portion into greased mini muffin pans. Baked for 15 minutes at 345 degrees. It made 23 with about 1/3 of the frosting left over.

1 Tbs instant espresso powder

4 oz bittersweet chocolate

3/4 cup unsalted butter

3/4 cup sugar

1 tsp vanilla

2 large eggs

1/2 cup all-purpose flour

1/4 tsp salt

1/2 cup chopped walnuts

Non-stick cooking spray

Preheat oven to 350 degrees. Dissolve espresso in 1 Tbs of hot water. Melt chocolate, butter and espresso paste using a double boiler. In a separate bowl mix the sugar, vanilla and eggs; add to chocolate mixture. Next, fold in flour and salt, followed by the nuts. Spray a 9-inch square cake pan with cooking spray and pour in mixture. Bake spproximately 20 minutes.

Cinnamon Cream Cheese Frosting

4 oz cream cheese

3 Tbs butter

1 1/2 cups confectioners' sugar

1/2 tsp vanilla (I used TJ's vanilla paste)

1/2 tsp cinnamon

Blend cream cheese and butter. Add powdered sugar; mix until smooth. Add vanilla and cinnamon, mix until just incorporated."

a question about TJ vanilla paste---is it lighter in color than liquid vanilla?

sometimes I just don't want the dark vanilla color in my white icing.

 
TJ's vanilla paste is also dark in color and

it has vanilla bean seed flecks in it which looked very nice in the cream cheese frosting. Colleen
