Dawn, the Chocolate Mint Cookies you posted are a definite KEEPER! I've made them...

...twice now, and everyone wants the recipe.

I admit I had my doubts, as the dough was SO HARD coming out of the fridge. I almost busted my cookie scoop. Then I re-read the recipe and it said to leave them in the fridge for an hour, not over night! No worries, though. I let the dough soften a bit on the counter and it worked fine!

I break the Andes mints in half and use a half mint on each cookie. WW really likes these. She used to eat Andes Mints like potato chips, so they're right up her alley!

We'll be making these every year.

I was wondering about halving the mints.
My daughters have always loved Andes so I know these will be a hit with my family, also!

I agree, they are going to be my entry in our annual Cookie contest..

We hold a rollicking, frollicking cookie contest every Christmas Eve..each guest walks into the house with a cookie to enter in the competition..it is loads of fun...a competition complete with bribery, sabatoge, lots of trash talking and really, really good cookies! My son and husband are looking pretty worried when they tasted these...they are fantastic!! I think I have the winner!

 
Ang, it is a lot of fun! Even guys who never step foot into a kitchen

hunt for recipes and make cookies for this. It becomes hilarious. Of course by Christmas Eve, there is no possible way you could sample all the cookies that are entered, a clear winner usually emerges. They get bragging rights all year, ( and trust me, use those rights liberally). We don't have any babies or little ones in the family at the moment, so it is decidedly an adult Christmas Eve. When we start having grandkids, we will revert to our old also wonderful christmas eve...the little ones do the nativity play, complete with costumes and sets. Can't wait for that.
