RECIPE:
Salad Lyonnaise

I thought I had invented something until I was researching French food this week and found a recipe for Salad Lyonnaise that was almost identical to what I thought I had invented. Oh well, at least this is my take on it....

Salad Lyonnaise


6 cups Romaine lettuce or frisee
1/2 lb bacon, preferrably thick cut
4 eggs
1/4 cup vinegar
1 pinch sugar (optional)
1 tsp dijon mustard
croutons



1 Rinse and tear lettuce into bite size pieces. Dry and set aside.
2 Cut bacon into strips about 1/4-1/2" wide. Fry until browned and crisped. Remove bacon to paper towel lined plate.
3 Drain all but a couple of tablespoons of the bacon fat from the pan. Whisk in vinegar, sugar and mustard. Keep warm.
4 Poach eggs.
5 Put about 1 to 1/2 cups lettuce/frisee on each plate. Top with croutons and bacon. Place and egg on each salad. Pour the warm dressing over and serve immediately.

Cooking Tips
Couple of other variations:
Dress the greens with prepared Caesar dressing.
Dress the greens with oil and serve with lemon wedges. Then when the yolk is broken on the salad, each person can sort of dress with the lemon and egg yolk.
Can also serve with shavings of a nice Parmesan cheese.

Applewood smoked. It's a small smokehouse in the Adirondacks that has been around forever. Rachael Ray mentioned it once on her show.
