Delicious Strawberry Curd recipe...

with a glut of fresh strawberries grown a few blocks from my house I just had to try this recipe. Wonderful!

I measureed the ingredients after weighing them so if anyone who wants to make this doesn't have a scale, just ask me.

The color after adding the eggs isn't as vibrant because of the yolks. So if that bothers you, add some food coloring (I didn't.)

Now what to make with this lusciousness....hmmm

I made some of this a couple of days ago. Turned out perfectly but I didn't thnk t tasted

"strawberry-ish" enough. All the same, I'm makng a strawberry cream tart. Start by folding a jar of curd into 2 cups whipped whipping cream and 4oz room temp cream cheese. Pour this into a pre-baked shell, top with sliced strawberries and glaze with strawberry preserves. Should be fit t'eat.

I think it was because the berries are cooked. Nice to top with fresh berries though.
