Drying Sourdough Starter

While I don't bake bread with starter, I know many of you do. I never realized you could dry the starter and then reconstitute it. I just thought you were compelled to make bread over and over and over again, never ending like Strega Nona's pasta pot.
Drying it out is kindof brilliant, in my opinion.

I used to dry starter by spreading it onto freezer paper in a baking pan, then I left it in the oven with the light on. It would be dry in about 36 hours.
