Use the freshest eggs when separating.

Eggs separate easier when they are cold, so separate immediately after removing from the fridge and then let warm to room temperature if necessary.

If you get a little bit of the egg yolk in with the whites when separating eggs; just tear off a piece of bread and touch it to the yolk in the whites. The bread will suck up the egg yolk.

A pinch of salt added to egg whites will make them fluffier.

To determine if an egg is fresh, simply immerse it in a bowl of cool, salted water. If it sinks, it's fresh, if it floats, it needs to be thrown away
