Friend just brought over a smoked chicken. I don't want sandwiches

A southwestern pizza? Top pizza with barbecue sauce, chicken, corn, bell peppers, cilantro....

 
BBQ Nachos

Shred the chicken and add your favorite bbq sauce. Layer chips on a pan, a little cheese, chicken, sliced black olives, jalepeno peppers (we use my candied and some stores are selling a similar type - they are very good with bbq), and then more cheese. Bake until cheese is melted. Top with diced fresh tomatoes. Serve with pico, salsa, sour cream, quacamole or diced avocados on the side.

 
A summer terrine?

Layer it in a mold with steamed asparagus, sliced hard boiled eggs, olives, etc. seal it all with a rich chicken aspic infused with garlic and some fresh herbs. Chill. Slice and serve on a bed of lettuce with a garnish of mayonaise.

 
Simplest "Smoked Chicken Salad" Sooo good

Smoked chicken torn into pieces.
Good Mayonaise....plain, not with Dijon
Madagascar green peppercorns...to taste
Red onion sliced thinly

Quantities depend on you......
If I dont use home made mayo I use Hellmans or a product from SA and I usually add some thick cream to thin it down and a little salt.

 
I think the salad would be good with some chunks of pineapple too, instead of the peppercorns. now

Thanks to you all- everything reads delicious! I'm making one of the pizzas tonight but

DH suggested putting some in pasta. I have peas in the garden and a well stocked pantry. I'm really not good at making up pasta sauce recipes, can you help me out even more and give me some direction.
