with tamale dumplings tonight.

We didn't let it sit overnight before chowing down, but it was great!

Unfortunately, the store was out of poblanos, so I used 3 Hungarian wax peppers and a jalapeno in their stead. It might have been a bit spicier, but we like that! I also roasted the tomatillos, which I think might have improved their flavor.

I have a container ready to take to work tomorrow for lunch, so I can test the "Let it rest" theory!

Thanks Judy. I have some prepared masa left over from tamale making, so I thought...

...I'd try to work it in to this recipe.
