GayleMO, I just made a batch of your caramel...

Dawn, If your thermometer is an even 15

take an indelible ink marker (Sharpie or somesuch) and write the number of degrees it is high/low.

MY new thermometer is one of the skinny glass tube ones mounted on a rectangular piece of metal, so the actual bottom of the glass tube can never set on the bottom of the pan. I wonder how I went so long before I broke the old thermometer!

 
mistral, I have two of those...and they're 5 degrees off from each other. Be careful because

the glass tube can eventually SLIDE on those metal strips holding it in place---which means all the reference numbers printed on the metal rectangle will be off.

The only other thing I don't like about it is you can't use it for a small batch of anything.

 
What a great way to get your mom to eat...

I remember when my mom was in that position and I was making everything I could to entice her. I feel honored that the caramel is helping someone in that way!
