Pineapple mango upside down cake made with a Jiffy corn muffin mix, 1/2 cup self rising flour, 2 eggs, the milk and oil 1/3 cup sugar and a glug of the mango syrup and lemon peel. This was also so good. The leftovers are still crispy buttery along the edges. I will be making both again. Working on garden cleanup and starting a few plants in the greenhouse. Bring on summer!
