Happy New Year everyone! I miss you all -- sorry I haven't been around

You are awesome. Not reallly at this point. We have been going off and on

South Beach, so I am missing good tortillas and tamales -- especially at Christmas. I had a couple of pounds of good pecans to make my Texas cherry cake. The Charleston restaurant scene is really heating up! It's been fun trying to find eateries that match those we loved in Austin. (that's why we are back on South Beach!!) Happy New Year, Melissa!

Cheez, I also make a "Tropical" version -- with macadamia nuts, apricots, pineapple...

Tropical – Macadamia Fruitcake

Prepare a loaf pan by greasing it and dusting it with flour, or line it with parchment.

Preheat the oven to 325°.

1 pound chopped dried apricots
1 pound chopped dried mangoes
1 pound macadamia nuts
4 ounces candied pineapple pieces
4 ounces candied ginger pieces

4 eggs, beaten
1 cup sugar

1 cup flour
½ teaspoon salt
1 teaspoon baking powder

Mix the flour, salt and baking powder. Pour this over the mixed fruit and nuts. With your hands, mix the flour in breaking up clumps of sticky fruit.

Beat the eggs and sugar together well. Pour over the fruit/flour mixture. Mix well.(I use my hands). Pour all into loaf pan and place in oven. Put a vessel with water in the oven to prevent over-browning of the fruitcake.

Bake for 1 ½ hours or until done (toothpick inserted in center of cake comes out clean – cake is pulling away from sides, is risen in the middle.)

Allow to cool for about 10 minutes, and then remove from pan to rack. Let the cake cool completely before wrapping in cheesecloth and basting it with Cointreau or some other fruity liquor.

Wrap the curing cake in aluminum foil for a week to 10 days.

 
Thanks everyone! I just found out that the specialist I have been working with for almost a year has

moved on! AARRGH. He has "gone back North". He's the kind of doc everyone wants -- careful, conservative and a great communicator! Except that he forgot to send me a note about his transfer. It is just a cataract -- nothing earth shattering, really, but he saw an indication of something else and has put me through every test (MRI, Lumbar puncture, etc) not to have complications during or after the cataract surgery. Meanwhile, time marches on, and close work (reading,writing,photography, even cooking) is frustrating because I lose focus. Anyway, I am optimistic for the New Year. My issues pale in the field of the losses our friends suffered this year.

You probably already know this, but, the information in your medical records is your property. I usually ask for copies of anything I want sent to ME so that when I choose a new provider I have the information available. Saves having to repeat the request in case I don't like the new provider and and move to another.

 
Is your problem Fuchs Dystrophy? My DH had to deal with this after cataract surgery. Keeping you in

my thoughts, pls let me know if I can be of help.

I hope you are weathering the crazy conditions down there this winter! Yikes. We are in a tornado watch right now. It is a nice day! Go figure.

I just googled Fuch's Dystrophy. I don't have any of those symptoms e.g. poor night vision, excessive haloing or poor morning vision. My problems occur as I am trying to do close work. Good to know about it though.
