Hey, dark chocolate includes bittersweet *and* semi-sweet. As far as milk chocolate is concerned,
there are some high cacao percentage milk chocolates around, which are not the typical U.S. sweet stuff. Valrhona puts out a great one, about 40% cacao. I hate Valrhona's dark chocolates, but their milk chocolate is the best I've tried so far - it's called Le Lacte. I prefer dark chocolate in general (my favorites are Santander 70% and 65%, plus some others that I haven't had access to in awhile, such as Fiori 65% and Chocovic Guaranda 71%), but sometimes I like a creamy milk chocolate on the dark side!
