Hey, dark chocolate includes bittersweet *and* semi-sweet. As far as milk chocolate is concerned,

there are some high cacao percentage milk chocolates around, which are not the typical U.S. sweet stuff. Valrhona puts out a great one, about 40% cacao. I hate Valrhona's dark chocolates, but their milk chocolate is the best I've tried so far - it's called Le Lacte. I prefer dark chocolate in general (my favorites are Santander 70% and 65%, plus some others that I haven't had access to in awhile, such as Fiori 65% and Chocovic Guaranda 71%), but sometimes I like a creamy milk chocolate on the dark side!

 
My FIL made pumpkin pie for dessert tonight.

But someone gave us some very decadent layer bars that had about an inch of semisweet chocolate on top, so I had those. He asked why I wasn't having pie, and I told him that chocolate trumps pumpkin pie anytime. He agreed. smileys/wink.gif

I used to shun milk chocolate too until I discovered

the high-cacao quality stuff at a local Belgian chocolate shop. I always used to ask them for a selection of dark chocolates only, and then one day the clerk forced me to try a milk chocolate one. It was eye-opening. I'd always assumed all milk chocolate was like that crappy candy-bar stuff. Not at all. Same with white chocolate, as I posted above.

Try something by Callebaut, Scharffen Berger or Valrhona.

 
You guys are soo funny! I was thinking of you last night. We were watching a re-run of an old SNL

Saturday Night Live skit. 4 of the actors were sitting at a table, eating a chocolate desert....They were oohhing, ahhing and moaning with each bite. I am not at all giving it justice, but suffice it to say they were extremelly animated with each and every bite! I tried to find it on Youtube, without any luck! If you get a chance to watch it, I am sure you will enjoy it! It had Lindsay Lohan as the host, and Pearl Jam was the band.

I've never found a white chocolate I like, and I've tried many good quality ones. Just not my taste.

 
I agree - it's good in stuff like raspberry mousse, etc., where it's not the dominant flavor.

maybe we should have her running around Pittsburgh with a 5 lb. chocolate bar in each hand...
