Has everyone started their holiday baking yet? What's on your list this year?

What an impressive cookie list! Like barb_b, I am barely over Thxgiving and last night made 1 batch

of earnie's Pumpkin Cookies (there is a picture at the link listed) because I had 1 solitary cup of pumpkin left over from making a Pumpkin Cheesecake w/ Sour Cream & Cognac topping for the recent holiday festivities. Cookies have been popped into the freezer.

Fast and simple. Made these this morning to take to our community office, maintenance crew, and gatekeeper.

I started this past weekend and made a batch of shortbread.

My husband says I overbaked it, but it's supposed to be dry!
Also on the list are:

~ Christmas Crack (butter crackers covered in caramel and melted chocolate).
~Chocolate Cookies
~Spice Cookies
~Biscochitos (traditional New Mexican cookie flavored with anise)

New this year is a pine nut and rosemary cookie; my cousin says it is DA BOMB, so I'm anxious to try it.

I'm also going to make my aunt's caramel popcorn. It's soooooo good.

I have a system...

I get everything out on kitchen counter: flour, sugar, eggs, butter, spices, etc. etc.

Then, I start with the lightest doughs, mix up the first one, wrap in saran wrap, label (name, recipe location, baking temp and time), and toss it into the fridge.

Next batch goes in the mixer, no washing of the bowl, just charge on through. Any bits of dough from the last batch will just disappear into the next.

I end up with the dark doughs: chocolate, lebkuchen, and gingerbreads.

Then, I clean everything up (the kitchen looks like a bomb went off).

Then I can take a package or two out each day to roll, shape, bake without destroying the kitchen for each batch.

There is a photo of last years cookies on PhotoBucket I believe.
