Hellllllllllllllllp. Easter lunch. I am completely out of ideas.

Traca, talk about an idiotic review for this:

People just floor me. At least she didn't pan the recipe she didn't make at all:

"Roasting the pork seemed a little much to me, so I substituted pork sausages I had laying in the freezer. I slit them halfway to the center to stuff them with the called for herbs, lined them in a casserole dish, and baked them until ready. I sliced them in little disks and threw 2 or 3 on each polenta shell. The presentation was just as nice and so much easier."

 
Oh, that I could be wafted away to Central Park, in Spring, with a bottle of Mateus and some cheese

and bread, escaping from corporate America for an hour at lunch time! This was the era of Mad Men, and I lived it and loved it!

 
There's always Spring leg o'lamb, but I might not rule out ham so fast...

If you aren't feeling much for a main dish, you could just do an easy spiral ham and focus your foodie attention to sides, appetizers, and dessert.

If you decide to go with ham, Paula Deen's pineapple cheese casserole pairs well and has become an Easter favorite.

Other menu items:
pickled deviled eggs are a must
strawberry spinach salad
chopped asparagus/chunks of red onion sauteed in garlic
Lemon dessert like lemoncello soaked lemon/raspberry/blurberry trifle or some such

I'm leaning toward a lemon tart (the only filled-in spot on the menu so far), since the Dorie Greenspan books arrived today, and I think Pierre Hermes's lemon tart is in there!

My aunt-in-law makes one like this--there's also something green in hers, too (asparagus? Peas?) next to the eggs, so when you slice it, it looks lovely. Great idea! smileys/smile.gif

 
Erin, what did you end up making?

I made the NYTs Bolzano Apple Cake today. Out of all the variations of that cake I've tried, I like the Bolzano best. It's almost all apples with a minimal amount of batter--just enough to hold it together.

BOLZANO APPLE CAKE

Adapted from Scott Carsberg

Time: 1 1/4 hours

1 stick butter (4 ounces), plus more for greasing pan
1/2 cup flour, plus more for pan
2 eggs
1 cup sugar
1 vanilla bean
1 1/4 pounds (3 to 4 small to medium) Granny Smith apples
2 teaspoons baking powder
1/2 cup milk at room temperature
Powdered sugar.

1. Heat oven to 375 degrees. Line 8-inch square pan with foil, then smear with thick layer of butter. Dust with flour; turn pan over and tap lightly to remove excess flour.

2. Melt butter in small saucepan. Set aside. Beat together eggs and half the sugar in a bowl. Continue to beat while slowly adding remaining sugar until thick; it should form a ribbon when dropped from a spoon.

3. Split vanilla bean in two lengthwise. Scrape seeds into egg-sugar batter and add pod to melted butter.

4. Peel, quarter and core apples, then trim ends and slice thinly.

5. Remove vanilla pod from butter and stir butter into egg-sugar batter. Combine 1/2 cup flour and baking powder, then stir it into batter alternately with milk. Stir in apples, coating every piece with batter. Pour batter into pan, using fingers to pat top evenly.

6. Bake for 25 minutes, then rotate pan; bake for about 25 minutes more, until cake pulls away from pan and is brown on top; a thin-bladed knife inserted into center will come out clean when it is done. Cool 30 minutes, then cut lengthwise and sprinkle slices with powdered sugar.

Yield: 6 to 8 servings.

Cheese, leek, and herb soufflé
Steamed chilled asparagus w/ vinaigrette
Sliced ham (I cheated and just ordered 3/4 lb. of rosemary ham from the deli)
Roasted potatoes
Dessert: Cookies, melon and grapefruit salad with mint

With all the great suggestions in this thread for main dishes, I don't know what possessed me to make a soufflé, but it turned out pretty well--all I wanted was something relatively light (in total) for lunch, and I think it worked out ok. Everyone went for a walk in the park afterwards, so, in the end, not bad. smileys/smile.gif And I've bookmarked this thread for next year, when I plan to get an earlier start on things--plus, there are a ton of good recipes for any occasion here.
