I appreciate what you had to say, especially about the greasy floors and spots. It's just weird...just when I get my kitchen legs and cruise through, you hit a spot and off you go...Nobody talks about how dangerous these places can be!
Ooh, foot massager. Man, what I wouldn't do for one of those. When I worked front of the house in restaurants, I was always a big fan of a double dose of Advil. And then hope my legs stop shaking long enough for me to actually get some sleep.
Ah, the war stories are coming back to me now....I must be crazy. Ah well. I'm looking forward to working with William. That guy is amazing.
I asked him one day what he thought of another pastry chef in town (I liked her concepts but thought her food was horrible. Some items were too sweet, some not sweet enough). William said, "She doesn't understand the ingredients." And I agree. Clearly he does, so to learn under his wing...I'm eternally grateful.
