Help from you guys please....ideas and suggestions....re cooking classes.....

Hi Traca....

Yes, this is more the price I was thinking of and I could tie in the taxi ride home, I think....I'll deff. look into this....

I too would need a min. of 4...6 would be great and I could also seat 12 to eat...partners then welcome for lunch.....quite a party.

That chocolate tour is quite expensive, but I'd do it...wow... next time I'm in gay Paree....
many thanx for feed back

Joe, I agree but I am wary about sending people off to buy fish here....

we rent fishing poles to be used from the yachts and we have a fish card that we mark...what can be eaten and what should NOT!!
A friend (French sailor) got very bad fish poisioning so much so that canned shrimp was a no-no...dont want to be the cause of anyone's illness.
As Traca says any regional food would be great for most folk......I guess she is right....
just stews, of which there are a lot of here, and baked boney fish that are small, are just not conducive to healthy light lunches.....

I am pulling ideas together for the menu and just feel so blessed having everyone here who all help with ideas so unstintingly...what a group...thanx to you too....XXOO

No I just mean getting the dive guys to do some driving. Don't they have little buses that they use

for picking up divers from hotels?

Absolutely, I'd stay away from boats! Yikes.

Would you feel comfortable about having the class return to your place in the evening for a party for what you all made in the afternoon? I really really think you could charge a lot for this. You'd have to have people watching your worldly goods though.

I could see paying $35 per person for the class...and you'd have to give them something to eat and drink during the class, but not a lot. Then bringing back the spouses at $65 for the 2 of them, to eat dinner around the BBQ. Eating what you made in the afternoon.

Lots of people go to condos but don't know anyone around. That would be a good way of introducing them if you could get them at the start of the sojourn.

My pleasure...can't wait to see how things shape up! Sounds like a fab. idea. It's funny how

times of stress make us really creative. Some of my best ideas come when they are most needed. Something about the need to stretch ourselves makes for great inspiration. Good luck! I'm sure it will be great!

Now, spreading the word...tap into any of the guest houses/conceirges. I always brought a flier w/photos--extra copies are great so they can hand them out to guests and to seal the deal, a sampling of your handiwork (a little delicious bite is memorable, for sure!)

I like the idea about the guided trip through the market. Here's what we did

in cooking classes with Diana Kennedy that I went to in Oaxaca Mexico....

The first morning, we gathered at the kitchen where she was teaching, and she had a display of all the unusual ingredients (herbs, chiles, spices, etc) we would be cooking with. She talked about each ingredient and told us how to make a good selection of that ingredient at the market and pick the best and the freshest. How to tell if cheese was old or what to look for to tell if the chiles were old or moldy inside, that sort of thing.

Then she divided us up into groups, gave us some pesos and a shopping list. Her "helpers" took us to the market with our list (in Spanish, of course) and we purchased the ingredients on our list with the pesos she had given us. We all met back at the kitchen at a certain time. She then critiqued our purchases as to whether we had bought the right thing, how good a quality we had selected, and whether we got a good price. She then taught us how to cook a meal with the ingredients we purchased.

This was on day one of a 5-day series of classes. The students all got to know each other and it was very hands-on and really a lot of fun.

You may not have enough time for something like this, but maybe you will have some ideas on how to make it work.
