Help, Grinch came to my house & PC crashed w/all my recipes!!!!

Ok, so the holidays are off to a bad start and I warn you now there is a bit of a pity party to this story...finally away from non-stop work at the office, yesterday I was suppose to go get the neices/nephews gifts (in our extended family only the kids get presents) but instead my beloved cat Maxx decided to become ill and go to heaven to be with DH...he was always daddy's kitty more than mine but this is the first time since I was 5 I haven't shared a home with a pet. Weird how quiet it is now that the house is completely empty.

Not being able to face shopping after all that I went to boot up the pc given I came home from the vet to a VM asking me to change what I'm bringing food wise to Xmas dinner plus I wanted to pull up a pix of Maxx and send an rip email to those who knew him...and I got "operating system can't be found." (I'm on my work laptop now.)

Ok, I caved...I officially decided yesterday completely sucked and I didn't dare test it's fate further so took a sleeping pill and went to bed.

However, today everything still needs to get done. I think I can recall how to make everything I'm suppose to bring for Xmas except I need a good T&T pecan pie recipe.

Does anyone have a good one to share?

And if there is a morale of the story (besides you should always back-up your pc and no I hadn't) it is: if someone cuts you off in traffic this holiday season...remember they could just be trying desperately to get their sick cat to the vet.

So sorry. Any chance Santa can bring you a new furry friend? I heard Santa makes stops at..

the animal shelter to answer the furry ones Christmas wishes too. Don't worry about doing it after Christmas as I heard animals don't use calendars...

Geez Maria, what an awful day you had. I am sorry you are having such a hard time. I certainly hope things will look up for you for the remainder of the holiday season, and the new year!
This is a no-fail recipe that even baking impaired me can make and it turns out great.

DOROTHY'S GOLDEN PECAN PIE

Serving Size : 6 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method

3 eggs
1 cup light corn syrup
2/3 cup sugar
2 tablespoons butter
1 teaspoon vanilla
1/8 teaspoon salt
1 cup pecan halves
1 pie crust (9 inch) -- unbaked
whipped cream

In a medium bowl beat eggs slightly. Beat in next 5 ingredients. Add pecan halves and stir. Pour into pie crust. Bake in 350° oven for 55 minutes or until knife comes our clean. Cool and serve with whipped cream.

Here's my favorite pecan pie....

Classic Pecan Pie

3 eggs, slightly beaten
1 cup Karo light or dark corn syrup (I use light)
1 cup sugar
2 tbsp butter or margarine, melted
1 tsp vanilla
1-1/2 cups pecans
1 unbaked 9-inch pastry shell

In large bowl, stir together first five ingredients until well blended. Stir in nuts. Pour into pastry shell. Bake at 350 degrees for 50 to 55 minutes or until knife inserted halfway between center and edge comes out clean. Cool. Serves 8

Great served with some freshly whipped cream lightly sweetened with sugar or confectioners sugar and some vanilla extract.

Maria, I'm sure the holdays are already difficult enough,

I'm sorry to hear you lost your pet. I've also had my computer crash without backup and I know how frustrating it is.

It can only get better! Let us know if there is any other cooking advice you need.

Sorry to hear about Maxx...

As for the pie, I always have used the recipe on the back of the Karo bottle, of which I don't have one of right now... but it comes out very well, the only thing I change is I arrange the pecan halves in concentric circles to make it pretty.

I totally feel for you - been there. (((())))

I'm sorry for all that befell (is that a word?) you the other day. Horrible.

But we definitely think alike. About 10 years ago my PC crashed and I lost EVERYTHING. But the only thing I really cared about were my recipes. I was so upset about it I, too, took something (xanax) and crawled under the covers. Only thing to do in such cases:)
