Help! Have one 13.5 lb. turkey. 12.5 people coming. I need to buy a (spare) turkey breast, right?

Ha! Yes, might as well have been, frankly. smileys/wink.gif All's well that ends well (or begins well, I hope).

 
Compiled the advice of everyone here and elsewhere and came up with this:

1. Red onions, lemon, orange, herbs, and s&p in the cavity.
2. Butter and herbs under the skin.
3. Breast side down in an oiled sling (per Steve2's advice) in a roasting rack.
4. 18 min./lb.
5. Breast up for the last 30 min.
6. Tent and let rest 30 min.
7. EAT.

Anything I'm missing?

 
You will have a great turkey, Erin. Check the timing though.

I do believe 18 min/lb will be a little too much. Usually an unstuffed bird of that size should roast at 325 for 15 min/ lb. Just check it to make sure it doesn't overcook. Your turkey will be delicious!

 
Thanks, Cathy--good point; there's about 30 min. difference b/w 15 and 18 min./lb.

I'd season your bird the night before and stick it in the fridge overnight. Also,

sounds like you've got a good technique for roasting. I'll just throw this out there...best turkey I've ever made was roasted in the Reynolds turkey bags. Sounds like an odd technique but the results? Fab. Note, if you're fans of uber crispy skin, this isn't the technique for you. Juicy bird? Yes. Crispy skin? No.

I'm following this same schedule (or "shed-yule", as pronounced by my British military buddies) for my 14 lb fresh organic turkey from Whole Foods.

 
this makes a wonderful moist turkey---and faster, but, the stuffing gets way too moist, I think.

would definitely recommend this with an unstuffed bird.

 
Agreed. Super moist turkey. I never cook stuffing in the bird. Too impatient. smileys/smile.gif
