And really, whole grain pasta isn't much different that white pasta. A little, but not enough to worry about. Again, eaten in moderation I don't think would hurt her, but she knows best.
I like your ideas of roasts, though. And stock up on the vegetables - good for her, and everyone else, too.
Low-carb Ocean Spray "Light" Ruby Red grafefruit juice is great, as are some of the reduced-sugar orange juices on the market. Good for breakfast time, along with unsweetened iced tea and cinnamon tea!
And using your crockpot for a crowd would be an easy thing. Ideas:
Chili without beans for her, or reduced amounts of beans
Any one of your great crockpot chicken recipes you have posted in the past
Beef stew (new potatoes, not starchy ones, same reason as above)
Meatballs made without bread crumbs and sauce made without added sugar
Pork Chop Supreme (casserole-type thing)
Also, anything with vinegar and/or good fats in it tends to slow the absorption of glucose into the bloodstream
Avoid deep-fried anything. Double whammy (flour and fat), as most people with diabetes must eat heart-healthy, too. Go easy on the flour. Also watch out for watermelon, bananas, as you mention, white rice ( and of course, full-sugar desserts.
