HELP!! Need new idea for potluck buffet item - no dessert (lots of those coming already)...

One time I had a little bit of asparagus I needed to use up so I used

them in roll ups. I think I spread cream cheese on a flour tortilla, super thin slices of deli ham and then a blanched asparagus spear so when I rolled it up and cut it the asparagus was in the center. Very pretty and yummy. I think I might have spread a very thin smear of horseradish also.

 
I am making them for our Xmas eve appetizer dinner.

They sound really good and I am glad to hear that you made them and liked them. What kind of filling did you use?

 
its verygood also if you marinate the asparagus with lemon juice. you could add sugar and/or ginger.

 
.......drum roll please..... I made Michael's yummy cocktail meatballs in cranberry sauce!

It was HARD narrowing it down, believe me, but in the end I went with something super-fast and this fit the bill. There were LOTS of compliments on them, Michael, so they get a big thumbs-up!

Caveat - since this was a church function I didn't use the wine. I subbed fruit juice mixed with some balsalmic vinegar that complimented the cranberries nicely. Next time I'll try it as written... I promise smileys/smile.gif
