Here's a challenge for you folks. I've invited two couples over for dinner next week.

Sounds good but I wouldn't be able to garnish with onion, peanuts, mint etc

Also couldn't serve in lettuce cups.

Rec: Louisiana Deviled Crab Cakes. As Sylvia posted above #20330

I made these for my Dad and I (he was 86 at the time) and he had difficulty swallowing but loved them and managed to eat most of one (fork the crab good).

For a starter, lobster bisque. A side of rice pilaf or mashed taters and creamed corn?

Edited to say maybe a nice creamy tomato soup for a starter in lieu of lobster bisque.

Everyone garnishes their own plate with all those things.....you don't pile on

top of the ground meat in a serving dish. A person takes lettuce if wanted, then stacks everything on. The person who can't have all the rest simply wouldn't stack or use lettuce. Easy.

 
I have to say as someone who has had Cathy's Laarb dinner....

Everyone makes his own dinner. It is a beautiful thing. You eat what is good for you, you leave what isn't. Pretty simple. And very good!

We love it. Very healthy, and flexible. The flavors are amazing! I think there are posted pics from Cathy's dinner w/ Richard. You can be flexible with the extras. For example, while you can cut veggies in match stick size, you could probably grate some veggies on a special plate for your friend to try. Grated onion, carrot, Grated cucumbers, etc. I think it would work!

You are very kind to put so much thought into a nice evening with your friends. It sure would be easier to make pasta! It is thoughtful of you to make it special for everyone!

Cyn how about this I made last night with some of my Habilut but can use any fish or ground meat

This was so darn good I even surprised myself LOL

The sauce is what does it.

Halibut Cheeks or any fish, chicken Fish bake 350 15 20 mins.
4- 6oz fish
lemon
salt-pepper
cilantro on top of fish small amount

Sauce in skillet
2 Tbsp butter melt
3 green onions finely chopped
1/4 cup red pepper diced
2-3 cloves garlic minced
1-2 tsp red pepper flakes
cook until soft then add
1/4 c white wine
1 1/2 tsp dry dill
1 tsp Tarragon
cook a few mins add
1 c chicken broth
1/2 c ha;f &half
1/2 c parm
1 tbsp lemon juice
salt and pepper to taste
bring up to boil mix 1/4 c flour & 1 Tbsp water
add to sauce cook til thinken.

Also I made
Toasted Oroz
1 tbsp unsalted butter
1 tbsp olive oil
1/3 c minced onion
1/2 tsp salt
Saute til soft add
1 cup orzo cook til light brown add
3 to 3/1/2 c chicken broth I only used 3
cook intil absorbed about 20 mins
then
1/2 c Parm
1/4 - 1/2 c basil chopped or (parsley and peas)
salt pepper to taste.

 
not fancy, but maybe a baked potato bar with some creamy toppings or taco meat, very fine

hamburger stoganov or something similar. the baked potato should be soft enough for him.
