Interesting about this...I learned there's a huge difference between grass finished & grain finished

beef--espeically between the Omega 6 (bad fat) and Omega 3 (good fat). Grain or corn finished beef has high Omega 6s. Grass finished beef actually has more Omega 3s because the cows live in the sunshine and eat the grass that has more nutrients. So it's not that red meat is bad, it depends on how it's raised.

 
I was amazed at how little the "chefs" knew about cuts of meat!! the info is in Joy of Cooking.
