Special thanks to Cyn and Meryl for the great answer. I have taken the advice to heart and have used the organic sugar for the cookies I'm making, but not for the cakes.
It's so nice to be remembered and welcomed back so warmly. I'll try to stop by more often. On top of being Natalie's main caretaker, I'm also working part-time as a computer game designer (as I've been doing more or less for the last 18 years) and doing the occasional stage play, so I have much less time for baking. But starting this coming January, I'm enrolling at SUNY-Schenectady's cooking school and will start taking for-credit classes (nights/weekends). I'm so looking forward to it!!
