I would add one more tip, which I didn't follow myself. Make it a day or two ahead!

If you have chicken broth on hand you could make the sauce ahead and only have to cook the chicken the day of.

Something else I didn't do--measure out ALL the ingredients before starting. It got confusing.

 
I just watched a show where the chef roasted EVERYTHING that went into the mole. He said the depth

of flavor improved with every single item.

 
That might be simpler and less fattening than frying some elements and toasting others.

But I can agree that cooking the items individually first really added so much to this recipe.

I'm considering going on a cassoulet strike until SOMEONE tries my recipe. This is similar in that

there are a lot of steps and it sounds daunting, but once it's assembled it is so easy to heat and serve. No last minute fussing.

 
PAAUUULLL!!!! Joe is not going to make us cassoulet anymore! This is like cursing!! Joe is

on time out, to reconsider.... : )

Joe, I wished I traveled to Ca now, it would be a must!! I had it a few times in France. dh and I both loved it!

How many pots were used with the mole pablano??? I am thinking a really messy kitchen.....

 
One big pot, several skillets, an infinite number of small bowls, plates, etc.

Blender, spice grinder, processor, mortar and pestle if you can find it in the mess. (I couldn't). Not to mention dark brown splatters everywhere.

Cassoulet is a piece of cake by comparison. It's really a gateway recipe to mole.

 
Infamous? INFAMOUS?!!

Barb, you are either:

1) Making a common error in usage (INfamous = bad repute) or

2) Deliberately getting my Irish up about my French cassoulet, hoping I'll cook up a batch just to prove it is FAMOUS.

Well, I'm tired of being the only person west of the Atlantic to cook this simple peasant dish, so I remain on strike until someone else does it.
