How do you grate ginger?

My grandmother sliced it & kept it in sherry. The leftover wine is nice too.

I wonder if there's a chance of botulism with this method as with garlic stored in oil.

I think that is a VERY good point. Here is a site with 5 ways to store and none in oil.

Fine Cooking did a test and found the vodka worked well as well as the plastic bag in the fridge.

I think storing something in oil is very different than in fortified high alcohol wine or booze

I really like the idea of vodka instead of sherry. I've used sherry, the ginger tasted more of it

than ginger. Now I buy small pieces and replace when they go bad so there's always some on hand. Put in an open plastic bag in crisper, keeps for quite awhile.
