How do you measure your flour? (if you don't use a scale). Dip and sweep or Spoon and sweep?...

Apparently, the dip and sweep yields a weight of about 5 oz and the spoon and sweep yields about 4.5 oz. I've always used the spoon and sweep method unless the recipe indicates otherwise.

 
Oh, and to answer your question: Depends on what I am making. . .

Cakes, muffins, pancakes, I spoon in and sweep.

Biscuits, bread, etc, I dip and sweep or shake.

I like a whole lotta' variety in my shakin'.

 
I was a spoon and sweeper until I got my scale. I measured at least 5 cups of flour

I used the spoon and sweep method to fill the cup, and measured it each time. It always came out to 4 1/2oz, so now I convert my recipes with cup measurements to ounces, based on a 4 1/2 oz cup.

However, I do check the introduction in each baking book, to see what method they use. Sometimes I'll adjust, but most times I don't.

I've been using my scale for at least 4 years, and I used to convert each recipe, by scribbling the weight measurement on the side. Would have to bust out the calculator to figure out 2 1/2 cups multiplied by 4.5 oz per cup....)

Finally got smart, and created an Excel chart with all sizes from 1/4 cup to 5 cups. The chart is now taped to the cover of my flour and sugar containers - the flour chart is based on a 4.5 oz cup, and the sugar chart is based on a 7 oz cup.

I marked my other containers (powdered sugar, brown sugar, the corn syrup bottle, etc.) with the weight measurement for 1 cup, and I convert those on the fly.

Love love love my scale, and would recommend it to anyone who likes to bake smileys/smile.gif

 
I have a Salter Aquatronic. The Aqua... part of it is kinda useless, but I do like the Salter

The Aqua feature supposedly measures water and similar fluids, but 8 fluid ounces of water is equal to 8 ounces, so it's kinda the same thing. I never use it.

My scale, since it's kinda old, has a max weight of 5 lbs, and measures in increments of 1/4 oz. It looks similar to the one that Curious linked there below. I love the flat, rectangular shape - it fits perfectly in a drawer near my mixer.

If I had to replace it, I'd go for 11 lbs, and 1/8 oz increments. I thought mine was gonna die soon, since the digital numbers started disappearing, but it's not anymore. Strange. I wonder if it got wet or something.
