How long can you safely keep leftover ham? Very cold refrigerator.

Do I dare admit I've kept it twice as long as the site suggests? The use by date on the

half hams I buy is usually way out there, but I suppose that's because it's vacuum packed.

 
3-4 days?! It's been 3 weeks... I froze half of the leftovers, I'd better throw the refr half out
