is this only entree and how many sides? Will you have buns to make sandwiches?
I usually use pork butt, but have also used shoulder and like the taste with either.
For thirty (my usual crew at work) I use three roasts, about 5# each. I put buns out, a lot of the guys like it served that way with coleslaw on the sandwich.
These are mostly guys and have a couple of big appetites. The is also another entree.
if a number of the kids are teenage boys they could make a dent in it! if there are tiny ones that could balance it out.
Also, is it served buffet style over a period of time?
am thinking 15#, raw would be plenty and leftovers are excellent.
I usually have a good amount left over which gets frozen for part of a later lunch,
