How peppery/bitter should arugula be?

I really don't like mature arugula. To me, it has to be picked very young to be good. Large leave
are just plain sour.
Everyone at my community garden disagrees with me and thinks I'm a wimp. They head back the flower stems and keep it producing big bitter leaves all summer.

Well, we're even then, because I'd love your winters. We get very hot here as well. Beyond 100 is
not unusual. But what is miserable is the smog and humidity in this blankety blank city. Sometimes the desert appeals to me.
We have no ocean for the smog to blow away over. I remember seeing the smog at 5 pm rolling out to Santa Catalina. Such a wonderful place to live.
