I am on a oatmeal kick what are somethings you all have made or favorites. TY

Whole oats or steel cut. Once cooked, I stir in a little agave, cinnamon and chopped almonds

Topped with milk...yum!

Steel-cut oats with almond milk (in a small crockpot)

1 Cup of steel-cut oats, sautéed in a TBL of butter for 8 minutes.
4 Cups of almond milk (I prefer the fresh stuff in the refrigerated section (it's slightly "whiter) but the boxed stuff works well too. You can use it with the sugar added or not, but if you go sugar-free, you might want to augment at the end.

While the oats are toasting, warm up the milk. This isn't totally necessary, but for my small 1.5 Quart crockpot, it lets me know the exact timing. Add the warm milk to the crock pot, add the oats, cover and cook on high for 2 hours. Stir after one hour...then you need to stir every 15 minutes because the oats will start to stick to the sides.

When done I add cinnamon, dried cranberries, a few Splenda packets and a scoop of almond butter if I have it.

Once shut off, it will continue to thicken.
Refrigerates and microwaves very well.

I serve with a dollop of yogurt and sometimes a sprinkling of granola or sautéed apples.

Larry adds a TBL of (neutral-tasting) fish oil and ground flax seed to his serving.

I make a overnight oatmeal.

1 c oatmeal
1 Tbsp flaxseed
1 Tbsp wheat germ
scoop protein powder
dried fruits and nuts
brown sugar to taste
Mix together
soy milk to the top shake or stir
sit overnight or at least 2hrs
micro 2 mins shake or stir 2- 3 more mins

Strawberries, blueberries, pears, bananas.Panera bread puts

strawberries and bananas on their huge bowl.

PatNOCAL, do you still have the directions for DYI instant oatmeal? Tons of flavor

combinations included in that, if I remember correctly. That was genius! When my ex was living in another state going to college, I made countless homemade oatmeal packets for him.

Are you sure it was me, Traca?? I can't abide oatmeal, nor any hot cereal...makes me gag. smileys/wink.gif

Sorry. I may have found it for you on the net but really don't recall.

Edited to add: Though, wowee -- just did a Google search and found quite a few sources for DIY oatmeal packets. Who knew?!

I like cold Swiss oatmeal

Mix several tablespoons of yogurt (plain, vanilla or honey), enough milk to bring to the amount of liquid to make a serving of oatmeal,, Splenda to taste, about 1/4 of a large apple, chopped, a tablespoon or two of chopped dates or raisins or craisins. can make multiple containers to this point & keep in fridge. Add a serving of dry raw oatmeal. Stir. Can let stand in fridge overnight, but I have a problem with cold cereal texture & like to add it just 10 minutes or so before eating. Top with a tablespoon or so of pecans or walnuts or almonds on top. This is a rough estimation. If you don't use enough liquid it will be too thick after standing.

I make this frequently. I love being able to take it out of the fridge, and sit down

to read the paper and have breakfast already prepared. I did not think I would like it cold, but it the summer months, not only is it a time saver, but I love the coldness of it.

I use different fruits which are in season, switch out honey for pure maple syrup, sometimes coconut syrup, and always toasted nuts to mix in.

Goetta

It's a local Cincinnati German food. Steel cut oats cooked with pork, beef, onions, garlic, spices into a thick mass that's molded into loaves, chilled, sliced, and fried for breakfast.

To use, add in 1 to 1¼ cups boiling hot water, and stir vigorously for 20 to 30 seconds. (Note any additional ingredients to be added after the water—see recipes above.) Store homemade packets in an airtight container for up to 4 weeks.

Cost $.25 to $.50 per individual packet

FRUGAL FACT: Set up an assembly line with 20 to 30 plastic ziplock bags and a large box of quick-cooking, rolled oats to save time in preparing the packets. Label the bags, then clean and reuse them again after using the contents.
