I had some pork belly this week.

Traveling with my husband I had a chance to try pork belly. It came as a small plate. I did think it would have a little bit more meat than it did. I sort of envisioned like a lean bacon. This was so delicious and browned on top but almost no meat. It was too rich to eat more than a few bites of the meatier parts. I did keep thinking how bad it would be for you so it kind of kept me from enjoying it without some guilt. I think that you could get some that is leaner, but of course this was from some locally raised, heirloom pig not bred for "white meat" so what was I expecting? I did want to see what all the fuss was about.

When I said pad Thai noodles, I meant the flat, straight cut kind that is also

referred to as straight cut noodles or rice stick noodles. I served the curry over the unadulterated noodles.

I did make a pad Thai recipe (see IMAGE) and I used tamarind paste in lieu of the juice. I only used a small amount but I think I added too much so I wasn't thrilled with it. If you make this, use only a tad or to taste. I added cooked shrimp in lieu of the dried shrimp. The pickled radish is the daikon that I bought at a Japanese grocer and I didn't care for it.

You've got that right suz. I added canned straw mushrooms near the end of cooking the last two

times. I also tried baby corn but it didn't work as well. What veggies did you use?

 
Cyn, my buddy Matt from www.mattbites.com made the pork belly and he said it was so good

he had to toss it out. Before he knew it, he'd consumed an embarrasing amount of belly and finally had to draw the line. Not sure my will power is that strong, but he absolutely raved about that recipe.

 
I blanch certain veggies first, snap peas, snow peas, stringbeans, broccoli

I like your idea of the straw mushrooms. btw I also add all the coconut milk in at once, I don't see the need for seperate additions. My sister did it this way when I first had it and I have done it this way since.
