I have 34 eggs I need to use. Blame it on senior moments.

Pavlova from lots of egg whites and then topped with lemon curd from the yolks

then some fresh berries and candied lemon peel

 
Barb, my grandfather love pickled eggs. I however, who many years ago worked in a bar

just can't stand the way they smell. Even perfectly cooked hardboiled eggs don't smell very good to me.

 
Lots of good ideas. One thing I do that is a real time saver

is make a big frittata on Sunday, loaded with veggies, then slice it into wedges, package individually, then I just grab one as I'm going out the door in the morning for quick, tasty, and healthful breakfast. THese also make great lunch sandwiches when you wrap two slices of bread around it or stuff it into a pita.

SPICY PICKLED BEETS AND EGGS

3 cans sliced beets (drain and put juice in a
pan)
1 medium sliced onion
6 hard boiled eggs -- shelled (6 to smileys/bigeyes.gif
2 1/2 cups raspberry vinegar
1 tsp salt
2 cups sugar
1 Tbsp mustard seed
1 tsp whole allspice -- 1 tsp whole
peppercorns
3 cinnamon sticks

Mix beet juice, vinegar, salt, sugar, mustard seed, allspice, peppercorns and cinnamon sticks in a pan. Heat to boiling and simmer 5 minutes. Put in beets and onions and simmer for 15 minutes. Turn off heat. Add eggs. Bring all to room temperature and refrigerate.
