I have a whole 2 3/4 lb red snapper (sorry Marilyn). Anyone prepared one? Any suggestions?

Have you baked it whole in salt before? It turned out well every time, but better if

it is not too humid.

 
Geez Curious, it may be too late but I love red snapper but never cooked it whole...

In fact, I bought frozen banana leaves about three weeks ago at Wong Kai Imports in Bradenton and they're still in the freezer to make a Thai-style grilled fish encased in banana leaves. Sorry to say perhaps I'm too late as Wong Kai is not open on Sunday.

Great suggestions, thanks everyone. I used Susan's recipe as I had ingredients as well as bok choy

on hand. I used the oven method as written and made bok choy and mushroom fried rice. The fish was delicious, thanks Susan! The mushroom fried rice not something I'd make again, but it did go well with the fish. Great fun trying to clean up the last of the fish scales that flew about as I was cleaning the fish.
