I have about two cups of collapsing strawberries. What can I do with them?

I agree these should go in the T&T. Dee-lish!

Mine were pretty flat, too. And they were brown in color--I attributed that to the cinnamon and strawberries. I took them out of the oven as my husband walked by. My husband asked, suspiciously, if I'd made bran muffins. I said no, but he still won't touch them. Oh, well. More for me!

 
I don't use a mixer to make these. I beat the eggs with a hand mixer, then added the vanilla and

melted butter and mixed them a little. I gently folded in the strawberries, and, again, gently folded the wet and dry ingredients together just until you couldn't see dry flour. This seems to be a common technique for making quick breads.

However, I still don't understand why they don't rise too much. Yes, I think my bread rose in the oven, then sank when it cooled. Don't know how to fix this.
