I made Posole for the first time tonight. OMG. It is delicious.

It's always part of our Christmas Eve feast. I make it in Phoenix a week or so...

...before we head for SD and freeze it. Then I just thaw it in the fridge and pop it into a large crock pot to get it up to serving temp. It is so good after having the extra time to "meld".
