I need a recipe for a sauce to serve with cold shrimp. I'm doing the traditional cocktail sauce

but I'd like another one also. I have no baking, shopping or card sending done. My best friend died last night while I held her hand. I have no holiday spirit and don't feel like searching for recipes so if you guys can help me out with this I'd be grateful.

Rec; Lemon-Rosemary Sauce/Dip. Sorry to hear so many sad happenings

for so many here in the last few days. Cyn, this is my newest, favoritist sauce to use with shrimp. It's really easy. I got this from Bon Appetit that was for chicken and I just adapted it to shrimp.

1/2 cup olive oil
1/2 cup fresh lemon juice
3 bay leaves, broken into small pieces
1 1/2 tablespoons chopped fresh rosemary
2 large garlic cloves, pressed
1 teaspoons salt
1 teaspoons hot pepper sauce

1/2 cup light mayonnaise

Place all ingredients in a small sauce pan and boil over medium high heat to reduce about 1/3. Cool and mix into mayo.

I am so sorry to hear of your loss! I just posted to Dianne that I lost by best friend to brain cancer on Dec 30 last year.

Therefore, I barely made any preparations at all. My family understood and somehow, we got though it.

Rec: Skewered Rosemary Shrimp with Mint Pesto

I'm so very sorry for your loss, Cyn. I'll be holding you and your friend in my thoughts and prayers.

As for the sauce, this mint pesto is really yummy and would be a nice dipping sauce for your shrimp.

Skewered Rosemary Shrimp with Mint Pesto
Servings: Makes 24.

Mint pesto
1/2 cup pine nuts, toasted
3 garlic cloves, peeled
2 tablespoons (packed) feta cheese
2 tablespoons (packed) Parmesan cheese
1 tablespoon coarsely chopped jalapeño chile
1/2 teaspoon salt
1/2 teaspoon ground black pepper
2 cups (packed) fresh mint leaves
2 tablespoons fresh lemon juice
1/3 cup extra-virgin olive oil

Shrimp
24 large uncooked shrimp (about 2 pounds), peeled, deveined, tails left intact
2 tablespoons olive oil
2 garlic cloves, minced
1 tablespoon chopped fresh parsley
3 tablespoons fresh lemon juice
24 4-inch-long woody rosemary sprigs

For mint pesto:
Combine first 7 ingredients in processor. Using on/off turns, process until mixture is smooth. Add mint leaves and lemon juice; process until smooth, stopping occasionally to scrape down sides of bowl. Gradually add oil and process until mint pesto is smooth and creamy. (Can be made 1 day ahead; cover and refrigerate.)

For shrimp:
Preheat broiler. Sprinkle shrimp with salt and pepper. Whisk oil, garlic, and parsley in medium bowl to blend. Add shrimp; toss to coat. Let stand at room temperature 15 minutes. Arrange shrimp in single layer on broiler pan. Broil until opaque in center, about 2 minutes per side. Transfer to large bowl; sprinkle with lemon juice and toss with 1/2 cup mint pesto. Starting at base end of rosemary, skewer 1 shrimp on each sprig. Arrange on platter and serve.

Pat’s notes: Took this to a party a few weeks ago and everyone loved it. I didn’t use the rosemary sprigs to skewer, just tossed the shrimp with a little of the mint pesto and then grilled the shrimp. Served the shrimp room temperature on a platter with a bowl of the pesto dipping sauce in the center. Very popular.

 
Rec: Azalea City Remoulade

I'm so sorry for your loss. Good friends are such a treasure.

This is a different type of sauce for shrimp and it's very good.

Azalea City Remoulade

1/4 cup mayonnaise
1/4 cup ketchup
2 T horseradish
Tabasco to taste
Cajun seasoning to taste

Combine mayo, ketchup, horseradish and Tabasco in bowl. Season with Cajun seasoning. Refrigerate for 30 minutes before serving.

REC: Rouille. (red pepper, garlic and basil sauce)

ROUILLE ("rust," red garlic sauce)

6 cloves garlic
Salt
1 4-oz jar pimentos, drained
1 fresh small hot red chile, chopped (or Tabasco to taste)
18 large leaves of fresh basil
3 egg yolks
3 Tbs. soup or milk
3/4 cup fresh bread crumbs
3/4 cup olive oil

By hand: Mash the garlic with salt in a mortar with a pestle until smooth, then pound in the rest of the ingredients one by one, switching to a whisk for the oil.

Or, put the garlic through a garlic press into a small bowl, sprinkle with salt, and mash with the back of a spoon until a smooth puree. Scrape it into a processor with everything but the oil. Process until finely chopped, the add the oil with the machine running.

For safety's sake, you can whisk the egg yolks with the liquid in a double boiler just until thickened. Let them cool before adding to the rest of the ingredients.

As for the sauce, try a take on Marie Rose which is very quick and easy

mix 2 parts ketchup to 1 part mayo, add worcestershire sauce, lemon juice, salt and pepper and maybe a bit of tabasco if you like it... you can adapt the quantities to taste, osmetimes I add more mayo, sometimes not...

we're having shrimp on x-mas day here also, too hot for much else and very Oz...
