I need help from the baker's on here

I made Pumpkin Cheescake muffins this morning. They have the usual ingredients, plus toasted walnuts, orange flavored dried cranberries and orange zest. The cream cheese is mixed with egg and sugar and layed in the middle of the muffin.

Should I freeze them or will they hold in an air tight container in the fridge for Sunday morning?

I wouldn't refrigerate them - baked goods dry up in the refrigerator. Definitely freeze them, and

make sure they're well wrapped. I usually do foil around each muffin, and put them in a ziplock freezer bag.

Depends on the recipe. Sometimes veggie-based quick breads benefit from a couple of days in the

fridge. I know whenever I made chocolate-chip carrot breads for Christmas, I'd let them "mellow" in the refrigerator for a minimum of 3 days before handing them out.

The one difference is they were NOT frosted. Simply wrapped in a layer of parchment, then a layer of foil.

Thanks, I froze them by putting two in small freezer bags, then the whole 12 of them into a large

freezer bag.

I see that you've already frozen them...

but I would have just put them in a sealed container in the fridge. Something about that trip through the freezer that I don't like. Next time do some of each and judge for yourself.

Oh no, I sure hope the short freezing time will be OK. I freeze all my my muffins

another person told me not to put them in the fridge because it would dry them out. I am not a true baker, only do it occasionally.
